Fritters were sort of a surprise to me. I just did not think this was something I even liked. The fritters I had tasted, back in my gluten days, were soggy, greasy, and generally made me feel ill after eating them. But, I was intrigued after reading an article that said fritters should not be soggy and greasy, so I tried their recipe.
Low and behold, the fritters were light, crispy, and an instant success!
I have two recipes now, and they are both great.
