Breads

Previous pageReturn to chapter overviewNext page

We don't actually eat as much bread as we used to. While meals used to rotate around a starch, these days they rotate around  veggies and meats. It's not that we don't have them available. It's just that they don't seem as interesting as they used to. I kind of think the reason people do eat so much wheat, and need it at every meal, is because of it's addictive quality. Once you drop the addictive part of it, it's boring. Kind of like de-alcoholized wine, or cigarettes without nicotine.

However, when people first drop gluten from their lives, there seems to be a period where they crave breads and pastries. Maybe it's one of those steps in the mourning process. And certainly, you need a carrier for making sandwiches or scooping up baba ganaoush! So in this section are our standby recipes for breads and pastries.
