If you have too much Kefiili made and want to take a break, or you need to go on vacation, just put the jar with the fresh milk and the grains from step 2 (Jar A, with the fresh milk) in the fridge instead of on the counter. It will keep a good month with no problem.
Putting some extra grains in fresh milk in the fridge is also a good way to keep a backup, just in case! There have been sad stories of dogs knocking over the Kefir jar and eating the contents, or well-meaning roomates tossing the “spoiled milk” down the garbage disposal!
