Molasses Crinkles

These are probably what I would have referred to as "ginger snaps". They are soft, spicy, and everyone who we've tried them on loves them.

3/4 cup coconut oil
2 eggs
2 cups brown sugar
1 tsp vanilla

Mix these together.

2 cups rice flour
2 cups potato starch
1/2 cup tapioca starch
2 tsp. baking soda
1 1/2 tsp. baking powder
1 tsp xanthan gum
1 tsp salt
2 tsp cinnamon
2 tsp powdered ginger
1/2 tsp ground cloves

Mix these together. Then add them to the mix above.

Roll the mix into 1" balls. Dip the balls in sugar and press slightly to form a cookie.

Bake at 350, not more than 10 minutes.
